Often the highlight of a big office meeting is when they bring out the biscuit platter. A large plate of all kinds of the best. Cookies, chocolate digestives, HobNobs. You name it. But when you’re gluten free and in such meeting, my God it’s torture.
When home for Easter last weekend, I decided to bake some biscuits perfect for such meetings, and perfect for dunking. A great crunch when bitten into, they’re perfect accompanied with a cuppa.
125g peanut butter (I use no added sugar)
180g rice flour
1tsp gluten free baking powder
(Cranberries or choc chips, optional)
- Preheat the oven to 180C.
- Soften the butter and then cream together with sugar. Beat in the peanut butter and egg. Using no added sugar peanut butter is best, to keep the sugar content to a minimum.
- Mix in the baking powder & flour and stir well.
- Place heaped teaspoons of mix with space to expand on lined baking trays, then bake in preheated oven for 15/20 mins. until golden and crisp.
- Tuck in with a cuppa!
